When preparing to serve, I stick the white in the fridge for about half hour to chill down to 41. For red bring it out and open it 30 min before serving to bring it up to around 62.

Wine should be stored in a dark, quiet (free of vibration), 55 degree F, 60-70% humidity environment, with some air circulation. This enivronment should remain constant, not fluctuate.
